So is it safe to cut the pins shorter on the OEP transformers after you've soldered them?

The only reason I ask is because on some transformers it isn't safe. Per Lundahl told me not to do it on his transformers because the pins are actually hollow with wires soldered inside, and you could damage them.

Yes it is safe but generally not needed because they are not long enough to touch the chassis plate.

The leads on the input transformer are pretty long on this one. Longer than I like.
